The wine stays on its **fine lees (sur lies)** for at least two months to complete malolactic fermentation. Aging lasts approximately **24 months** in **barriques (225 L)**, using both first and second passage wood. Nearly 2 years after harvest, the wine is bottled and rests in our cellar for several months before release. --- #### SENSORY PROFILE AND EVOLUTION The most distinguishing feature of Barbaresco from the Starderi MGA is its **extraordinary aging potential**. **The Character:** When young, these wines offer freshness and approachable tannins.
