VINIFICATION AND AGING

Grapes are fermented in thermo-conditioned stainless steel tanks for at least one week at 28-32 °C.

The wine is kept on its fine lees (sur lies) at 20-22 °C for at least two months to complete malolactic fermentation.

The total aging process lasts approximately 24 months, a portion of which is spent in traditional oak casks (2,000-3,000 L).

Bottled more than two years after harvest, it rests in our cellar for at least 6 months before release.
