VINIFICATION AND AGING
Grapes are fermented in thermo-conditioned stainless steel tanks for at least one week at 28-32 °C.
The wine stays on its fine lees (sur lies) for at least two months to complete malolactic fermentation.
Aging lasts approximately 24 months in barriques (225 L), using both first and second passage wood.
Nearly 2 years after harvest, the wine is bottled and rests in our cellar for several months before release.
SENSORY PROFILE AND EVOLUTION

The Character: When young, these wines offer freshness and approachable tannins. Over time, they unveil the deep structure, richness, and complexity that define their essence.
Palate: Full-bodied and persistent, with elegant, austere tannins that remain smooth and balanced.
