BARBARESCO DOCG PAJORE
A Barbaresco Riserva of extraordinary elegance and harmony, born from vines planted in 1985 and beautifully exposed to the southwest. Marcarini stands out for its excellent sun exposure in the first part of the day and a cooler climate in the late afternoon: an ideal microclimate that gives the wine an enveloping softness, rich fruit, and tannins of the finest silk.

VINIFICATION AND AGING
Once transported to the winery, the grapes are destemmed and crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks for at least one week, maintaining a constant temperature between 28-32 °C.
After drawing off and racking, the wine is kept on the fine lees (sur lies) at a temperature of 20-22 °C for a period of at least two months, where it completes malolactic fermentation.
Then begins the aging period which lasts about 30 months, part of which is spent in traditional 2,000-3,000 liter oak casks.
Finally, more than three years after the harvest, the Barbaresco DOCG RISERVA MARCARINI is bottled and, after a further period of bottle aging, is released for sale.
ORGANOLEPTIC CHARACTERISTICS AND TERROIR
The Barbaresco Riserva Marcarini is born in the municipality of Treiso, from vines planted in 1985 grown at an altitude of 290 meters on calcareous soils composed of the typical fossiliferous Sant’Agata Marls. Benefiting from excellent south-west exposure, the vineyard receives perfect sunshine in the first part of the day and then enjoys a cooler climate in the late afternoon, a combination that gives the wine remarkable elegance and an exceptionally harmonious drinkability.
Bouquet: The nose is rich and complex, where elegant notes and spices blend harmoniously with rich scents of red fruit.
Palate: On the palate it expresses great structure, soft and persistent. The tannins, while intense, reveal themselves to be of the finest silk, enveloping and free of any bitter or astringent sensation.
FOOD PAIRINGS
Due to its imposing structure and complex aromatic weave, this Barbaresco Riserva pairs wonderfully with substantial meat dishes, roasts, game, and flavorful aged cheeses.
